  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup sun-dried tomatoes (in oil), chopped
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  • Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt, pepper, and Italian seasoning.
  • Cook chicken for 5-6 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
  • In the same skillet, add garlic and sautรฉ until fragrant. Pour in chicken broth and sun-dried tomatoes, simmering for 2 minutes.
  • Stir in heavy cream and Parmesan cheese, cooking until the sauce thickens.
  • Add spinach and stir until wilted. Return chicken to the skillet and spoon sauce over it. Simmer for 5 minutes.
  • Garnish with fresh basil and serve with pasta or mashed potatoes.

Notes

  • Use boneless chicken thighs for a richer flavor.
  • For a lighter version, use half-and-half or Greek yogurt instead of heavy cream.
