Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 egg, beaten
  • ½ cup all-purpose flour
  • 2 tbsp olive oil
  • 8 oz pasta (fettuccine or penne)
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese (for sauce)
  • Salt and pepper to taste
  • 1 tsp Italian seasoning

 

  • Fresh parsley for garnish

Instructions

  • Prepare the Chicken: Pound the chicken breasts to an even thickness. Season with salt and pepper.
  • Coat the Chicken: Dredge each piece in flour, dip into beaten egg, and coat with a mixture of breadcrumbs and Parmesan cheese.
  • Cook the Chicken: Heat olive oil in a pan over medium heat and cook chicken for 4-5 minutes per side until golden and crispy. Set aside.
  • Cook the Pasta: Boil pasta according to package instructions. Drain and set aside.
  • Make the Sauce: In the same pan, melt butter and sauté garlic until fragrant. Add heavy cream, chicken broth, Parmesan cheese, and Italian seasoning. Simmer until thickened.
  • Combine: Toss cooked pasta in the creamy sauce. Slice crispy chicken and serve on top of the pasta.

 

  • Garnish & Serve: Sprinkle with fresh parsley and extra Parmesan. Enjoy!
