  • 1 cup buttermilk

  • Vegetable oil (for frying)

  • 4 brioche or sandwich buns

  • 1 cup shredded lettuce or slaw mix

  • 1/2 cup tartar sauce

  • Lemon wedges (optional)

Instructions

  • Soak cod fillets in buttermilk for 20 minutes.

  • In a bowl, mix flour, cornmeal, paprika, garlic powder, salt, and pepper.

  • Heat oil in a skillet to 350ยฐF (175ยฐC).

  • Dredge the soaked cod in flour mixture and fry for 3โ€“4 minutes per side until golden and crispy.

  • Remove and drain on paper towels.

  • Toast buns lightly and spread tartar sauce on each side.
