  • ½ cup chicken broth

  • 2 tbsp butter

  • 1 tsp Italian seasoning

  • Salt and pepper to taste

  1. Prep Chicken: Pound chicken breasts to even thickness. Season with salt and pepper.

  2. Prepare Coating: In one bowl, beat the eggs. In another, mix Parmesan and breadcrumbs.

  3. Coat Chicken: Dip chicken into eggs, then into Parmesan-breadcrumb mixture.

  4. Cook Chicken: Heat olive oil in a pan over medium heat. Cook chicken 5-6 minutes per side until golden and cooked through. Remove and set aside.
