4 boneless, skinless chicken breasts
1 cup grated Parmesan cheese
1 cup breadcrumbs (Panko preferred)
2 eggs
2 tbsp olive oil
3 cloves garlic (minced)
1 cup heavy cream
½ cup chicken broth
2 tbsp butter
1 tsp Italian seasoning
Salt and pepper to taste
Fresh parsley for garnish
Prep Chicken: Pound chicken breasts to even thickness. Season with salt and pepper.
Prepare Coating: In one bowl, beat the eggs. In another, mix Parmesan and breadcrumbs.
Coat Chicken: Dip chicken into eggs, then into Parmesan-breadcrumb mixture.
