  • 1 lb boneless, skinless chicken breasts
  • 1 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional, for extra heat)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 block (8 oz) cream cheese, softened
  • 1/2 cup shredded Parmesan cheese
  • 1 lb cooked pasta (penne or fettuccine)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/2 cup diced onion
  • Salt and black pepper, to taste

Instructions

  • Season chicken breasts with Cajun seasoning, garlic powder, onion powder, smoked paprika, and cayenne pepper.
  • Place chicken in the crock pot along with diced onion, bell peppers, cream of chicken soup, and chicken broth.
  • Cook on LOW for 6-7 hours or HIGH for 3-4 hours, until the chicken is tender and cooked through.
  • Shred the chicken in the crock pot using two forks.
  • Stir in the cream cheese and Parmesan cheese until melted and creamy.
  • Cook your pasta according to package instructions. Drain and add it to the crock pot, stirring until well coated.
  • Serve immediately and garnish with additional Parmesan or fresh parsley if desired.
