1 lb boneless, skinless chicken breasts
1 tbsp Cajun seasoning
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
1/2 tsp cayenne pepper (optional, for extra heat)
1 can (10.5 oz) cream of chicken soup
1 cup chicken broth
1 block (8 oz) cream cheese, softened
1/2 cup shredded Parmesan cheese
1 lb cooked pasta (penne or fettuccine)
1 red bell pepper, sliced
1 green bell pepper, sliced
1/2 cup diced onion
Salt and black pepper, to taste
Instructions
Season chicken breasts with Cajun seasoning, garlic powder, onion powder, smoked paprika, and cayenne pepper.
Place chicken in the crock pot along with diced onion, bell peppers, cream of chicken soup, and chicken broth.
Cook on LOW for 6-7 hours or HIGH for 3-4 hours, until the chicken is tender and cooked through.
Shred the chicken in the crock pot using two forks.
Stir in the cream cheese and Parmesan cheese until melted and creamy.
Cook your pasta according to package instructions. Drain and add it to the crock pot, stirring until well coated.
Serve immediately and garnish with additional Parmesan or fresh parsley if desired.
Notes
For a spicier dish, increase the cayenne pepper or add red pepper flakes.
