1 lb boneless, skinless chicken breasts
2 cups broccoli florets, chopped
1 cup uncooked long-grain rice
2 cups chicken broth
1 cup shredded cheddar cheese
1 can (10.5 oz) cream of chicken soup
1 small onion, diced
2 cloves garlic, minced
Salt and pepper to taste
Instructions
Place chicken breasts in the crockpot and season with salt and pepper.
Add garlic, onion, rice, chicken broth, cream of chicken soup, and broccoli. Stir gently.
Cook on low for 5–6 hours or high for 3–4 hours, until chicken is cooked through.
Shred the chicken with forks, then stir it back into the crockpot.
