Crockpot Cheesy Chicken Broccoli Rice is a delicious and hearty meal combining tender chicken, creamy cheese, broccoli, and flavorful riceโ€”all slow-cooked to perfection.

Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts
  • 2 cups broccoli florets, chopped
  • 1 cup uncooked long-grain rice
  • 2 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 can (10.5 oz) cream of chicken soup
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Place chicken breasts in the crockpot and season with salt and pepper.
  2. Add garlic, onion, rice, chicken broth, cream of chicken soup, and broccoli. Stir gently.
  3. Cook on low for 5โ€“6 hours or high for 3โ€“4 hours, until chicken is cooked through.
  4. Shred the chicken with forks, then stir it back into the crockpot.
  5. Mix in shredded cheddar cheese until melted and creamy.
  6. Serve warm and enjoy!

Notes

  • Use frozen broccoli if fresh isnโ€™t available. Add it during the last hour to prevent overcooking.
  • For extra flavor, add a dash of paprika or garlic powder.
