  • 4 cups chicken broth
  • 1 (28 oz) can crushed tomatoes
  • 1 (8 oz) package cream cheese, softened
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1 (16 oz) package cheese tortellini (fresh or frozen)
  • 4 cups fresh spinach
  • Grated Parmesan cheese (for serving)

Instructions

  1. Cook the Sausage: In a skillet, cook the sausage until browned. Drain excess grease.
  2. Prepare the Crockpot: Add browned sausage, onion, garlic, chicken broth, crushed tomatoes, Italian seasoning, red pepper flakes, salt, and pepper to the Crockpot. Stir well.
  3. Cook on Low: Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  4. Add Tortellini: In the last 30 minutes of cooking, stir in the cream cheese and cheese tortellini. Let the tortellini cook until tender.
  5. Add Spinach: Stir in fresh spinach and let it wilt for 5-10 minutes before serving.
