For the Sosaties:

  • 2 pounds boneless, skinless chicken thighs, cut into 1-inch cubes
  • 1 cup dried apricots
  • 1 large red onion, cut into chunks
  • 1 large bell pepper (any color), cut into chunks
  • 12 bamboo skewers, soaked in water for 30 minutes

Instructions

  • Prepare the Marinade:
    • In a large bowl, combine the plain yogurt, curry powder, ground cumin, ground coriander, ground turmeric, lemon juice, minced garlic, grated ginger, salt, and pepper.
    • Mix well to ensure all ingredients are well incorporated.
  • Marinate the Chicken:
    • Add the chicken thigh cubes to the marinade, ensuring each piece is well coated.
    • Cover and refrigerate for at least 2 hours, or overnight for more intense flavor.
  • Prepare the Sosaties:
    • Preheat the grill to medium-high heat.
    • Thread the marinated chicken pieces, dried apricots, red onion chunks, and bell pepper chunks onto the soaked bamboo skewers, alternating between ingredients for a colorful and balanced skewer.
  • Grill the Sosaties:
    • Grill the sosaties on the preheated grill, turning occasionally, until the chicken is cooked through and slightly charred, about 10-15 minutes.
    • Ensure the internal temperature of the chicken reaches 165°F (74°C).
