  • 4 salmon fillets (6 oz each), skinless

  • 2 cups fresh spinach, chopped

  • 4 oz cream cheese, softened

  • ¼ cup grated Parmesan cheese

  • 1 garlic clove, minced

  • 1 tbsp olive oil

  • Salt and pepper, to taste

  • Lemon wedges (for serving)

Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a skillet, heat olive oil and sauté garlic until fragrant. Add spinach and cook until wilted.

  3. Remove from heat, mix in cream cheese and Parmesan. Stir until well combined.

  4. Slice a pocket into each salmon fillet. Season with salt and pepper.

  5. Fill each fillet with the spinach-cheese mixture.

  6. Place on a baking sheet and bake for 15–20 minutes or until salmon is cooked through.
