Ingredients

Scale
  • 1 1/2 lbs boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1/4 cup bourbon whiskey
  • 1/4 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup ketchup
  • 2 tbsp apple cider vinegar
  • 2 garlic cloves, minced
  • 1/2 tsp ground ginger
  • 1/4 tsp red pepper flakes (optional for heat)
  • 1/4 cup water
  • 1 tbsp cornstarch (for thickening)
  • Sliced green onions (for garnish)
  • Sesame seeds (for garnish)

Instructions

  • Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook for 5-7 minutes, until browned and cooked through. Remove the chicken and set aside.
  • In the same skillet, add bourbon and simmer for 2-3 minutes to cook off the alcohol.
  • Stir in soy sauce, brown sugar, ketchup, apple cider vinegar, garlic, ginger, and red pepper flakes (if using). Simmer for 5 minutes until the sauce begins to thicken.
  • In a small bowl, whisk together water and cornstarch to create a slurry. Stir this into the sauce and continue to simmer for 2-3 minutes, until the sauce thickens.
  • Return the cooked chicken to the skillet and toss to coat in the sauce. Cook for another 2-3 minutes until the chicken is heated through.
  • Garnish with sliced green onions and sesame seeds before serving.

Notes

  • Serve with rice or steamed vegetables for a complete meal.
  • For a lighter version, use chicken breast and reduce the sugar to taste.
