1 package (8 oz) cream cheese, softened
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 egg yolk
1 package puff pastry, thawed
1 egg (for egg wash)
1 tablespoon water
Preheat oven to 375°F (190°C).
In a mixing bowl, combine cream cheese, sugar, vanilla extract, and egg yolk. Beat until smooth.
Unfold puff pastry onto a lightly floured surface. Cut into squares or rectangles.
Spoon about 2 tablespoons of the cream cheese mixture into the center of each pastry square.
Fold the corners of each pastry towards the center, slightly overlapping the filling.
In a small bowl, whisk together the remaining egg and water to make an egg wash. Brush the pastry with the egg wash.
Place pastries on a baking sheet lined with parchment paper.
