  • 3 tbsp butter
  • 1 small onion, diced
  • 1 cup diced carrots
  • 1 cup diced celery
  • 3 cups peeled and diced potatoes
  • 4 cups chicken broth
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1/4 cup all-purpose flour
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef and drain any excess fat. Remove and set aside.
  2. In the same pot, melt butter and sautรฉ onions, carrots, and celery until tender.
  3. Add the potatoes, chicken broth, and cooked ground beef. Bring to a boil, then reduce heat and simmer until potatoes are tender (about 15 minutes).
  4. In a separate bowl, whisk flour into milk until smooth. Stir the mixture into the soup.
  5. Simmer for an additional 5-7 minutes until the soup thickens.
  6. Remove from heat, stir in shredded cheese, garlic powder, salt, and pepper until melted and creamy.
