This easy cheeseburger soup recipe combines ground beef, cheddar cheese, and vegetables for a creamy, delicious meal perfect for the whole family.

Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cups potatoes, peeled and cubed
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 2 tbsp all-purpose flour
  • 2 tbsp butter
  • 1 tsp garlic powder
  • Salt and pepper, to taste

Instructions

  • In a large pot, cook the ground beef over medium heat until browned. Drain excess grease and set aside.
  • In the same pot, melt butter and sauté onion, carrots, and celery until softened.
  • Add garlic powder, potatoes, and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
  • In a small bowl, whisk flour into milk and slowly stir into the pot. Cook for 5 minutes, stirring constantly, until thickened.
  • Stir in the cooked ground beef and shredded cheddar cheese until melted and smooth.
  • Season with salt and pepper to taste, then serve hot with crusty bread or crackers.

Notes

  • For a thicker soup, add more flour or reduce broth slightly.
  • Garnish with green onions, bacon bits, or extra cheese for added flavor.
  • Substitute ground turkey for a lighter version.
