This delicious casserole combines smoked sausage, diced russet or Yukon gold potatoes, and a rich, creamy blend of cheddar cheese, cream of mushroom soup, and sour cream. Seasoned with garlic and onion powder, and garnished with paprika and fresh parsley, it's the perfect dish for a satisfying dinner any night of the week.

  • 1 pound smoked sausage, sliced into rounds
  • 6 medium-sized russet or Yukon gold potatoes, peeled and diced
  • 2 cups shredded cheddar cheese
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 cup sour cream
  • 1/2 cup milk
  • 4 tablespoons melted butter
  • 1 small onion, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 teaspoon paprika (optional, for garnish)
  • Fresh parsley for garnish

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the melted butter, cream of mushroom soup, sour cream, milk, garlic powder, onion powder, salt, and pepper. Mix well.
  • Add the diced potatoes, sliced smoked sausage, and chopped onion to the bowl, stirring to coat evenly with the sauce.
  • Transfer the mixture to a greased baking dish and spread it out evenly.
  • Sprinkle the shredded cheddar cheese on top.
  • Cover with foil and bake for 45 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the top is golden and bubbly.
  • Garnish with paprika and fresh parsley before serving.

Notes

  • You can substitute cream of mushroom soup with cream of chicken soup for a different flavor.
  • Adjust seasoning to your preference.
  • For a crispy topping, add breadcrumbs or crushed crackers on top before baking.
