This hearty crockpot cowboy stew recipe combines ground beef, beans, potatoes, and flavorful seasonings for an easy, comforting meal.

  • 1 lb ground beef
  • 2 medium potatoes, diced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes
  • 1 small onion, diced
  • 2 cups beef broth
  • 1 tbsp chili powder
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper, to taste

Instructions

  • Brown the ground beef in a skillet over medium heat and drain excess fat.
  • Add the browned beef, diced potatoes, beans, corn, tomatoes, onion, and seasonings to the crockpot.
  • Pour in the beef broth and stir everything together.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours, until potatoes are tender.
  • Taste and adjust seasonings before serving.
