2 lbs ground beef
1 small onion, finely chopped
1 small green bell pepper, finely chopped
1 cup crushed Ritz crackers
2 large eggs
1 cup shredded cheddar cheese
1/2 cup whole milk
1/4 cup ketchup
1 tsp salt
1/2 tsp black pepper
1/4 tsp garlic powder
For the Glaze:
1/2 cup ketchup
2 tbsp brown sugar
1 tsp yellow mustard
Instructions
Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
In a large bowl, combine ground beef, onion, green bell pepper, crushed Ritz crackers, eggs, shredded cheddar cheese, milk, ketchup, salt, pepper, and garlic powder. Mix until well combined but do not overmix.
Transfer the meat mixture to the prepared loaf pan, pressing it evenly.
In a small bowl, mix together ketchup, brown sugar, and mustard to prepare the glaze. Spread the glaze evenly over the meatloaf.
Bake for 1 hour or until the internal temperature reaches 160°F (71°C).
Let the meatloaf rest for 10 minutes before slicing. Serve warm.
