  • 1 lb boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 2 cups chicken broth
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper (optional)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1/2 cup sour cream
  • 1/2 cup shredded Monterey Jack cheese
  • 1 tbsp olive oil (optional, for browning chicken)

Instructions

  • Add chicken breasts, white beans, green chilies, chicken broth, and all seasonings (cumin, paprika, cayenne, garlic powder, onion powder, salt, and pepper) to your crockpot.
  • Stir to combine. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • Once cooked, shred the chicken directly in the pot using two forks.
  • Stir in sour cream and shredded Monterey Jack cheese until melted and creamy.
