  • 1 store-bought pound cake or angel food cake, cubed

  • 1 (3.4 oz) box instant lemon pudding mix

  • 2 cups cold milk

  • 1 cup heavy whipping cream

  • 2 tbsp powdered sugar

  • 1 tsp vanilla extract

  • 2 cups fresh blueberries

  • Zest of 1 lemon (optional, for garnish)

Instructions

  1. In a bowl, whisk the lemon pudding mix with cold milk until thickened (about 2 minutes). Set aside.

  2. In another bowl, beat heavy cream with powdered sugar and vanilla until soft peaks form.

  3. Fold half of the whipped cream into the lemon pudding to lighten it.

  4. In a trifle dish or glass bowl, layer half the cake cubes, half the pudding mixture, and half the blueberries.

  5. Repeat the layers and finish with a layer of whipped cream on top.

  6. Garnish with lemon zest and a few extra blueberries.

  7. Chill in the refrigerator for at least 1 hour before serving.

Notes
