This easy spinach lasagna recipe is a delicious vegetarian alternative to traditional lasagna. It features layers of fresh spinach mixed with creamy ricotta, mozzarella, and Parmesan cheeses, all nestled between sheets of tender lasagna noodles. For the Spinach Mixture:

  • 16 oz fresh spinach (or 10 oz frozen spinach, thawed and drained)
  • 2 cups ricotta cheese (whole milk preferred)
  • 2 cups shredded mozzarella cheese
  • 1/2 cup freshly grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced (optional)
  • Salt and pepper, to taste
  • Pinch of nutmeg

For the Tomato Sauce:

  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper, to taste

For the Lasagna Assembly:

  • 12-16 lasagna noodles (cooked or no-boil)
  • 1 cup shredded mozzarella cheese (for topping)
  • Fresh basil or parsley, chopped (optional, for garnish)

Instructions

  • Tomato Sauce: Heat olive oil in a large skillet over medium heat. Sautรฉ onion until soft, then add garlic and cook for 1 minute. Add crushed tomatoes, tomato sauce, oregano, basil, salt, and pepper. Simmer for 20 minutes, stirring occasionally.
  • Spinach Mixture: In a large bowl, combine spinach, ricotta cheese, 2 cups mozzarella, Parmesan, egg, garlic (if using), salt, pepper, and nutmeg. Mix until well combined.
  • Assembly: Preheat oven to 375ยฐF (190ยฐC). Spread a thin layer of tomato sauce on the bottom of a baking dish. Add a layer of lasagna noodles, followed by a layer of the spinach mixture, then more tomato sauce. Repeat layers, finishing with a layer of noodles and a final layer of tomato sauce. Sprinkle the top with 1 cup of mozzarella cheese.
  • Bake: Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15-20 minutes until the cheese is bubbly and golden. Let rest for 10 minutes before serving. Garnish with fresh basil or parsley if desired.

Notes

  • You can use frozen spinach for convenience; just make sure to drain it well.
  • For a quicker version, use store-bought marinara sauce instead of making your own.
