1 lb ground beef (or turkey)
1 packet taco seasoning
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn kernels, drained
1 can (10 oz) diced tomatoes with green chilies
2 cups shredded cheddar cheese
1 bag (10 oz) tortilla chips, crushed
1 cup sour cream
1 cup salsa
1 small onion, finely chopped
1 bell pepper, chopped
2 cups cooked rice (optional)
1 cup chopped lettuce (for topping)
1 cup diced tomatoes (for topping)
1/4 cup sliced black olives (optional)
Fresh cilantro (optional)
Instructions
Preheat oven to 350ยฐF (175ยฐC).
In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
Add taco seasoning and 1/4 cup water to the beef, simmer for 5 minutes.
In a large bowl, combine cooked beef, black beans, corn, diced tomatoes with green chilies, onion, bell pepper, and cooked rice (if using).
Layer half the crushed tortilla chips in the bottom of a baking dish.
Spread the beef mixture over the chips.
Top with remaining crushed tortilla chips and shredded cheese.
Bake for 20-25 minutes or until cheese is melted and bubbly.
Serve with sour cream, salsa, lettuce, diced tomatoes, black olives, and cilantro on top.
Notes
For a leaner option, use ground turkey instead of beef.
