  • 1 lb ground beef (or turkey)
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 cups shredded cheddar cheese
  • 1 bag (10 oz) tortilla chips, crushed
  • 1 cup sour cream
  • 1 cup salsa
  • 1 small onion, finely chopped
  • 1 bell pepper, chopped
  • 2 cups cooked rice (optional)
  • 1 cup chopped lettuce (for topping)
  • 1 cup diced tomatoes (for topping)
  • 1/4 cup sliced black olives (optional)
  • Fresh cilantro (optional)

Instructions

  • Preheat oven to 350ยฐF (175ยฐC).
  • In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add taco seasoning and 1/4 cup water to the beef, simmer for 5 minutes.
  • In a large bowl, combine cooked beef, black beans, corn, diced tomatoes with green chilies, onion, bell pepper, and cooked rice (if using).
  • Layer half the crushed tortilla chips in the bottom of a baking dish.
  • Spread the beef mixture over the chips.
  • Top with remaining crushed tortilla chips and shredded cheese.
  • Bake for 20-25 minutes or until cheese is melted and bubbly.
  • Serve with sour cream, salsa, lettuce, diced tomatoes, black olives, and cilantro on top.

Notes

  • For a leaner option, use ground turkey instead of beef.
  • Add cooked rice for extra bulk.
  • Adjust toppings to your preference.
