  • 4 cups yellow squash, sliced

  • 1 small onion, diced

  • 1 cup shredded cheddar cheese

  • 1/2 cup sour cream

  • 1/2 cup mayonnaise

  • 1 cup crushed buttery crackers (like Ritz)

  • 2 eggs, beaten

  • 2 tbsp butter, melted

  • 1/2 tsp salt

  • 1/2 tsp black pepper

Instructions

  • Preheat oven to 350ยฐF (175ยฐC). Grease a baking dish.

  • In a large skillet, sautรฉ squash and onion over medium heat until soft, about 10 minutes. Drain excess liquid.

  • In a bowl, mix the cooked squash, cheddar cheese, sour cream, mayonnaise, eggs, salt, and pepper.

  • Transfer mixture to the prepared baking dish.

  • In a separate bowl, combine crushed crackers with melted butter. Sprinkle evenly over the casserole.

  • Bake for 25-30 minutes or until golden brown and bubbly.
