This French Chicken Casserole combines tender chicken thighs with a rich sauce made from white wine, Dijon mustard, and cream. Enhanced with leeks, carrots, and fresh thyme, this comforting casserole is perfect for a family meal or special occasion.   • 6 bone-in, skin-on chicken thighs (or a mix of thighs and drumsticks)
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 large onion, finely sliced
  • 3 cloves garlic, minced
  • 1 large leek, cleaned and sliced
  • 2 carrots, peeled and diced
  • 1 cup mushrooms, sliced (optional)
  • 1 ½ cups dry white wine (Chardonnay or Sauvignon Blanc)
  • 1 cup chicken broth
  • 1 cup heavy cream or crème fraîche
  • 2 tsp Dijon mustard
  • 2 sprigs fresh thyme (or 1 tsp dried thyme)
  • 1 bay leaf
  • Salt and black pepper to taste
  • 2 tbsp all-purpose flour (for thickening)
  • 1 tbsp fresh parsley, chopped (for garnish)
  • Optional: 2 apples, peeled and sliced, 1 tsp Calvados (apple brandy)

Instructions

  • Preheat oven to 350°F (175°C).
  • Heat olive oil and butter in a large oven-safe pot over medium heat. Brown chicken thighs on both sides. Remove and set aside.
  • In the same pot, sauté onions, garlic, leeks, carrots, and mushrooms (if using) until softened.
  • Stir in flour and cook for 1-2 minutes. Slowly add white wine, scraping up any browned bits. Bring to a simmer.
  • Add chicken broth, Dijon mustard, thyme, bay leaf, salt, and pepper. Return chicken to the pot.
  • Cover and bake in the oven for 30-40 minutes.
  • Stir in heavy cream or crème fraîche and cook for an additional 10 minutes.
  • Garnish with parsley and serve with crusty French bread or mashed potatoes.

Notes

  • For a sweeter twist, add sliced apples and Calvados to the casserole before baking.
  • Substitute crème fraîche for a tangier finish.
  • Adjust thickness by adding more flour for a heartier sauce.
