4 medium green tomatoes, sliced 1/4 inch thick
1 cup all-purpose flour
1 cup cornmeal
1/2 cup buttermilk
2 large eggs
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper (optional)
Vegetable oil for frying
Slice green tomatoes into 1/4-inch thick slices and set aside.
In a shallow bowl, mix flour with salt, black pepper, paprika, and cayenne pepper (if using).
In another shallow bowl, whisk together buttermilk and eggs.
Place cornmeal in a third shallow bowl.
Dip each tomato slice first in the flour mixture, then in the buttermilk mixture, and finally in the cornmeal, coating evenly.
Heat vegetable oil in a large skillet over medium-high heat until hot but not smoking.
Fry tomato slices in batches, about 2-3 minutes per side, until golden brown and crispy. Do not overcrowd the pan.
Transfer fried tomatoes to a paper towel-lined plate to drain excess oil.
Serve hot with your favorite dipping sauce.
Notes
For extra flavor, add a pinch of garlic powder to the flour mixture.
Serve with a dipping sauce like ranch or remoulade for added taste.
