Instructions

  • Prepare the Cookie Crust:
    • Preheat the oven to 350ยฐF (175ยฐC).
    • In a bowl, whisk together flour, baking powder, and salt.
    • In another bowl, beat the softened butter and sugar until creamy.
    • Add the egg and vanilla extract, and mix until combined.
    • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
    • Press the dough onto a greased pizza pan or baking sheet, shaping it into a round crust.
    • Bake for 12-15 minutes or until the edges are golden. Let it cool completely.
  • Make the Cream Cheese Spread:
    • Beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
    • For a smoother texture, mix in the heavy cream (optional).
    • Spread the cream cheese mixture evenly over the cooled cookie crust.
  • Assemble the Fruit Pizza:
    • Arrange the sliced fruit on top of the cream cheese layer in a decorative pattern.
    • Optional: Microwave the apricot preserves for a few seconds to thin it, then brush it over the fruit for a glossy finish.
    • Chill the fruit pizza in the refrigerator for about 1 hour before serving.
