Ingredients

Scale
  • 12 oz (340g) pasta (spaghetti or fettuccine)
  • 2 tbsp olive oil
  • 4 tbsp butter
  • 4 cloves garlic, minced
  • 10 oz (280g) mushrooms, sliced (cremini or button)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Cook pasta according to package instructions. Reserve 1 cup of pasta water, then drain.
  2. Heat olive oil and butter in a large skillet over medium heat.
  3. Sauté garlic until fragrant, then add mushrooms. Cook until softened and browned.
  4. Stir in heavy cream and Parmesan cheese, letting it simmer until the sauce thickens.
  5. Toss the cooked pasta with the sauce, adding reserved pasta water if needed for desired consistency.
  6. Season with salt, black pepper, and garnish with parsley. Serve hot.

Notes

  • Substitute heavy cream with half-and-half for a lighter sauce.
  • Add cooked chicken, shrimp, or spinach for extra protein or flavor.
  • Use gluten-free pasta for a gluten-free version.
