For the Pork Chops:

  • 4 boneless pork chops
  • 1/2 cup grated Parmesan cheese

  • 1 tablespoon olive oil
  • Salt and pepper to taste

For the Cheesy Scalloped Potatoes:

  • 4 large potatoes, thinly sliced
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  • Preheat oven to 375ยฐF (190ยฐC) and lightly grease a large baking dish.
  • Prepare the pork chops: In a small bowl, combine Parmesan cheese, breadcrumbs, minced garlic, garlic powder, paprika, salt, and pepper. Rub pork chops with olive oil, then coat with the Parmesan mixture. Set aside.
  • Prepare the scalloped potatoes: In a saucepan over medium heat, melt butter and sautรฉ garlic until fragrant (about 1 minute). Add heavy cream, chicken broth, thyme, salt, and pepper. Bring to a simmer, then remove from heat.
  • Layer the sliced potatoes in the baking dish, pouring the cream mixture over them. Sprinkle shredded cheddar cheese between the layers and on top.
  • Place the pork chops on top of the potatoes in the baking dish.
