This German Potato Salad recipe includes waxy potatoes, crispy bacon, and a tangy dressing made from apple cider vinegar, Dijon mustard, and broth. Optional garnishes like chives, capers, green onions, hard-boiled eggs, and whole grain mustard add extra flavor. A versatile side dish, ideal for any occasion!

Ingredients

Scale
  • 2 pounds of waxy potatoes (Yukon Gold or red potatoes)
  • 1/2 pound of bacon, diced
  • 1 medium yellow onion, finely chopped
  • 1 cup of chicken or vegetable broth
  • 1/4 cup of apple cider vinegar
  • 2 tablespoons of Dijon mustard
  • 1 tablespoon of sugar
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup of fresh parsley, finely chopped
  • 1/4 cup of chopped fresh chives (optional for garnish)
  • 2 tablespoons of capers (optional for extra tanginess)
  • 1/4 cup of sliced green onions (optional for garnish)
  • 2 hard-boiled eggs, chopped (optional for added texture and flavor)
  • 1 tablespoon of whole grain mustard (optional for a different mustard flavor)
  • 1 teaspoon of garlic powder (optional for a subtle garlic taste)

Instructions

  • Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let cool slightly.
  • Peel and slice the cooled potatoes, then place them in a large bowl.
  • In a skillet, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the skillet.
  • Add the finely chopped yellow onion to the skillet and cook until softened, about 5 minutes.
  • Stir in the chicken or vegetable broth, apple cider vinegar, Dijon mustard, and sugar. Bring to a simmer, stirring to dissolve the sugar.
  • Pour the warm dressing over the sliced potatoes and gently toss to coat.
  • Add the cooked bacon and finely chopped parsley to the potatoes, mixing gently.
  • If using, add the optional garnishes: chives, capers, green onions, hard-boiled eggs, whole grain mustard, and garlic powder.
  • Let the salad sit at room temperature for at least 30 minutes before serving to allow the flavors to meld.

Notes

  • Serve warm for a traditional experience, or chill for a refreshing cold salad.
  • Adjust vinegar and mustard levels to taste for a more tangy or mild flavor.
