  • 4 medium potatoes, diced (about 1/2-inch cubes)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika (optional)
  • 1 teaspoon ground cumin (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme or oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup beef broth (optional)
  • 1 tablespoon Worcestershire sauce (optional)
  • Fresh parsley for garnish (optional)

Optional Add-ons/Variations:

  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/2 cup diced bell peppers
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup frozen peas or corn
  • 1 tablespoon ketchup or tomato paste

Instructions

  • Heat olive oil in a large skillet over medium heat. Add diced potatoes and cook for 8-10 minutes until tender and lightly browned. Remove and set aside.
  • In the same skillet, add ground beef, breaking it up as it cooks. Once browned, add onions and garlic, cooking until softened.
  • Season with smoked paprika, cumin, garlic powder, onion powder, thyme, salt, and pepper.
  • Stir in beef broth and Worcestershire sauce if using, and return potatoes to the skillet. Mix to combine and cook for another 5-7 minutes.
  • Garnish with fresh parsley and serve.

Notes

  • Add shredded cheese for extra richness or bell peppers for more color.
  • For a tomato-based twist, stir in ketchup or tomato paste.
