Ingredients
Scale
1 pound ground beef (preferably lean)
2 medium sweet potatoes, peeled and diced into small cubes
1 medium onion, diced
3 cloves garlic, minced
2 bell peppers (any color), diced
2 medium tomatoes, diced (or one 14.5-ounce can of diced tomatoes, drained)
2 tablespoons olive oil
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon paprika
Salt and pepper to taste
1/4 cup fresh cilantro, chopped (for garnish)
1 lime, cut into wedges (optional, for serving)
Instructions
Heat olive oil in a large skillet over medium-high heat.
Add diced onions and garlic to the skillet and sauté until fragrant and translucent, about 3-4 minutes.
Add ground beef, breaking it apart with a spatula, and cook until browned, about 5-7 minutes.
Stir in diced sweet potatoes, bell peppers, and tomatoes. Season with cumin, chili powder, paprika, salt, and pepper.
Cover the skillet and cook, stirring occasionally, until sweet potatoes are tender, about 10-15 minutes.
Uncover and cook for an additional 2-3 minutes to allow any excess liquid to evaporate.
Garnish with fresh cilantro and serve with lime wedges on the side, if desired.
Notes
For a spicier version, add a pinch of red pepper flakes or a chopped jalapeño.
Serve as a standalone dish or with a side of rice or quinoa for a more filling meal.
