Ingredients

Scale
  • 1 pound ground beef (preferably lean)
  • 2 medium sweet potatoes, peeled and diced into small cubes
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 bell peppers (any color), diced
  • 2 medium tomatoes, diced (or one 14.5-ounce can of diced tomatoes, drained)
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • 1 lime, cut into wedges (optional, for serving)

Instructions

  • Heat olive oil in a large skillet over medium-high heat.
  • Add diced onions and garlic to the skillet and sauté until fragrant and translucent, about 3-4 minutes.
  • Add ground beef, breaking it apart with a spatula, and cook until browned, about 5-7 minutes.
  • Stir in diced sweet potatoes, bell peppers, and tomatoes. Season with cumin, chili powder, paprika, salt, and pepper.
  • Cover the skillet and cook, stirring occasionally, until sweet potatoes are tender, about 10-15 minutes.
  • Uncover and cook for an additional 2-3 minutes to allow any excess liquid to evaporate.
  • Garnish with fresh cilantro and serve with lime wedges on the side, if desired.

Notes

  • For a spicier version, add a pinch of red pepper flakes or a chopped jalapeño.
  • Serve as a standalone dish or with a side of rice or quinoa for a more filling meal.
