This easy hamburger casserole recipe is a comforting and hearty meal that combines ground beef, pasta, vegetables, and cheese. Perfect for a family dinner, it's a dish that's both flavorful and satisfying.

Ingredients

  • Ground Beef: 1 lb
  • Onion: 1 medium, chopped
  • Garlic: 2 cloves, minced
  • Diced Tomatoes: 1 can (14.5 oz)
  • Condensed Cream of Mushroom Soup: 1 can (10.5 oz)
  • Milk: 1 cup
  • Pasta: 2 cups uncooked (elbow macaroni or rotini)
  • Frozen Mixed Vegetables: 1 cup (peas, carrots, corn, green beans)
  • Cheddar Cheese: 2 cups shredded
  • Salt: 1 tsp
  • Black Pepper: 1/2 tsp
  • Italian Seasoning: 1 tsp
  • Parmesan Cheese: 1/4 cup grated
  • Breadcrumbs: 1/4 cup (optional)

Instructions

  • Preheat oven to 375°F (190°C).
  • Cook the pasta according to package instructions until al dente. Drain and set aside.
  • In a large skillet, cook ground beef over medium heat until browned. Add chopped onion and minced garlic, cooking until softened.
  • Stir in diced tomatoes, condensed cream of mushroom soup, milk, salt, pepper, and Italian seasoning. Bring to a simmer.
  • Add the frozen mixed vegetables and cooked pasta to the skillet. Mix until well combined.
  • Transfer the mixture to a greased baking dish. Top with shredded cheddar cheese.
  • Mix grated Parmesan cheese and breadcrumbs (if using) and sprinkle over the casserole.
  • Bake uncovered for 20-25 minutes, until the cheese is melted and bubbly and the top is golden brown.
  • Serve hot and enjoy!

Notes

  • You can substitute ground beef with ground turkey or chicken for a lighter version.
  • Use any type of short pasta you prefer.
