  • 5-6 medium potatoes (Russet or Yukon Gold)
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 1 can cream of mushroom soup (10.5 oz)
  • 1 cup milk (whole, 2%, or milk alternative)
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1 tsp paprika
  • 1 tsp dried thyme (optional)
  • Butter or cooking spray for greasing the dish

Instructions

  • Preheat oven to 350ยฐF (175ยฐC). Grease a 9x13-inch baking dish with butter or cooking spray.
  • In a skillet, cook the ground beef over medium heat until browned. Drain excess fat and set aside.
  • In the same skillet, sautรฉ the diced onion and minced garlic until softened, about 3-4 minutes.
  • Thinly slice the potatoes, ensuring even thickness for consistent cooking.
  • In a mixing bowl, combine the cream of mushroom soup, milk, paprika, thyme (if using), salt, and pepper.
  • Layer half of the sliced potatoes at the bottom of the prepared baking dish.
  • Spread the cooked ground beef over the potato layer, followed by the sautรฉed onions and garlic.
  • Pour half of the soup mixture over the beef and potatoes.
  • Add the remaining potato slices on top, and pour the remaining soup mixture evenly over the top layer.
  • Cover the dish with aluminum foil and bake for 1 hour.
  • Remove the foil, sprinkle the shredded cheddar cheese over the casserole, and bake uncovered for an additional 15-20 minutes, or until the cheese is melted and bubbly.
  • Let the casserole rest for 5-10 minutes before serving.
