Ingredients

Scale
  • 2 pounds boneless, skinless chicken thighs

  • 1 cup soy sauce

  • 1 cup brown sugar

  • ยฝ cup water

  • 2 tablespoons fresh grated ginger

  • 2 cloves garlic, minced

  • 1 tablespoon honey (optional for extra sweetness)

  • 1 tablespoon sesame oil (optional for richness)

  • Chopped green onions and sesame seeds (for garnish)

Instructions

  1. In a medium bowl, whisk together soy sauce, brown sugar, water, ginger, garlic, and optional honey and sesame oil.

  2. Add chicken thighs to a resealable bag or bowl, and pour marinade over them.

  3. Marinate in the refrigerator for at least 4 hours, preferably overnight.

  4. Preheat grill to medium-high heat. Grill chicken for 5-7 minutes per side, or until fully cooked.

  5. Let rest for a few minutes before slicing. Garnish with green onions and sesame seeds.

Notes

  • Chicken thighs retain more moisture than breasts for grilling.

  • The marinade can be doubled and simmered separately for a glaze.

  • Great served with steamed rice or grilled pineapple slices.
