These Healthy Carrot Cake Oatmeal Breakfast Bars are soft, chewy, and naturally sweetened with maple syrup and carrots.   • 2 cups rolled oats

  • 1/2 cup unsweetened applesauce

  • 1/4 cup maple syrup or honey

  • 1/4 cup almond butter (or peanut butter)

  • 1/4 cup chopped walnuts or pecans (optional)

  • 1/4 cup raisins (optional)

  • 1 tsp cinnamon

  • 1/2 tsp ground ginger

  • 1/4 tsp nutmeg

  • 1 tsp vanilla extract

  • 1/2 tsp baking powder

  • 1/4 tsp salt

  • 2 eggs (or flax eggs for vegan option)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8x8-inch pan with parchment paper.

  2. In a large bowl, mix oats, baking powder, salt, and spices.

  3. In another bowl, whisk together eggs, applesauce, maple syrup, almond butter, and vanilla.

  4. Stir in grated carrots.

  5. Combine wet and dry ingredients, then fold in nuts and raisins if using.

  6. Spread the batter evenly in the pan.

  7. Bake for 25–30 minutes, or until set and lightly golden.

  8. Let cool before slicing into bars.
