Ingredients

  • Chicken Breast (1.5 to 2 pounds, boneless, skinless)
  • White Beans (2 cans, 15 oz each)
  • Chicken Broth (4 cups, low-sodium)
  • Green Chilies (2 cans, 4 oz each)
  • Onion (1 medium, diced)
  • Garlic (4 cloves, minced)
  • Cumin (2 tsp)
  • Oregano (1 tsp)
  • Ground Coriander (1 tsp)
  • Chili Powder (1 tsp)
  • Salt and Pepper (to taste)
  • Greek Yogurt or Light Sour Cream (1/2 cup)
  • Lime Juice (1 tbsp)
  • Cilantro (1/4 cup, chopped)
  • Olive Oil (1 tbsp)

Instructions

  • Heat olive oil in a large pot over medium heat. Sauté the diced onion until soft, about 5 minutes.
  • Add minced garlic, cumin, oregano, ground coriander, and chili powder. Cook for 1-2 minutes until fragrant.
  • Pour in the chicken broth, and add the chicken breasts. Bring to a boil, then reduce to a simmer. Cook for 15-20 minutes until chicken is cooked through.
  • Remove the chicken, shred it, and return it to the pot.
  • Stir in the white beans, green chilies, salt, and pepper. Simmer for an additional 10 minutes.
  • Remove from heat, stir in Greek yogurt or light sour cream, lime juice, and cilantro.
  • Serve hot, garnished with extra cilantro or your favorite toppings.

Notes

  • Adjust the spice level by adding more chili powder or incorporating chopped jalapeños.
  • To make this dish vegetarian, omit the chicken and use vegetable broth.
  • For extra creaminess, use half-and-half or cream cheese instead of Greek yogurt.
