This Hobo Casserole recipe is a quick and delicious comfort food made with ground beef, potatoes, cheese, and a creamy soup base. Perfect for busy weeknights, this hearty dish is sure to please the whole family.

  • 1 lb ground beef
  • 4 medium potatoes, thinly sliced
  • 1 can cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 medium onion, diced
  • Salt and pepper, to taste
  • 1 tbsp olive oil (for sautéing)

Instructions

  • Preheat oven to 375°F (190°C).
  • In a skillet, heat olive oil and sauté the diced onion until softened. Add ground beef, season with salt and pepper, and cook until browned. Drain excess fat.
  • In a greased casserole dish, layer half of the sliced potatoes on the bottom.
  • Spread the cooked ground beef and onions over the potatoes.
  • Pour cream of mushroom soup evenly over the beef.
  • Layer the remaining potatoes on top and sprinkle with shredded cheddar cheese.
  • Cover with foil and bake for 45 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the potatoes are tender and the cheese is melted and bubbly.
  • Let it cool for 5 minutes before serving.

Notes

  • You can substitute cream of mushroom soup with cream of chicken or a homemade cream sauce if desired.
  • For extra flavor, add garlic powder, paprika, or Italian seasoning to the ground beef.
  • Use a mandoline slicer for evenly thin potato slices.
