  • 4 large egg yolks

  • 1 1/2 tsp vanilla extract
  • 3 ripe bananas, sliced

For Topping:

  • 1 1/2 cups heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Make the Crust: Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press mixture into a 9-inch pie dish. Bake for 8-10 minutes. Let cool completely.
  2. Prepare the Filling: In a medium saucepan, whisk together sugar, cornstarch, and salt. Gradually add milk and cook over medium heat, stirring constantly, until the mixture thickens and boils (about 7-10 minutes).
  3. In a separate bowl, whisk egg yolks. Slowly whisk in a small amount of the hot milk mixture to temper the eggs. Pour the egg mixture back into the saucepan and continue cooking for 2 minutes, stirring constantly.
  4. Remove from heat and stir in butter and vanilla. Let the mixture cool slightly.
  5. Assemble the Pie: Arrange sliced bananas in the cooled pie crust. Pour the custard filling over the bananas, spreading evenly. Cover with plastic wrap (directly on the surface to prevent a skin from forming) and refrigerate for at least 4 hours, or until set.
  6. Whipped Topping: In a large bowl, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  7. Finish: Once the pie is set, spread or pipe the whipped cream over the top. Garnish with extra banana slices if desired. Serve chilled.
