Enjoy a scrumptious homemade cherry pie with a perfectly flaky crust and a sweet-tart cherry filling. This delightful dessert is easy to prepare and perfect for any occasion.

  • 2 cups fresh or frozen pitted cherries
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon almond extract
  • 1 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 2 pie crusts (homemade or store-bought)
  • 1 tablespoon butter
  • 1 egg (for egg wash)

Instructions

  • Preheat oven to 425°F (220°C).
  • In a saucepan, combine cherries, sugar, cornstarch, almond extract, lemon juice, and salt. Cook over medium heat until thickened, about 10 minutes. Stir frequently.
  • Roll out one pie crust and place it in a 9-inch pie pan. Pour the cherry filling into the crust.
  • Dot the filling with butter. Roll out the second pie crust and cover the pie, crimping the edges to seal. Cut slits in the top for steam to escape.
  • Brush the top crust with beaten egg for a glossy finish.
  • Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
  • Let cool before serving.

Notes

  • For a sweeter pie, add an additional 1/4 cup of sugar.
  • If using frozen cherries, thaw and drain them before using.
  • Serve with vanilla ice cream or whipped cream for an extra treat.
