2 cups fresh or frozen pitted cherries
1 cup granulated sugar
1/4 cup cornstarch
1/4 teaspoon almond extract
1 teaspoon lemon juice
1/4 teaspoon salt
2 pie crusts (homemade or store-bought)
1 tablespoon butter
1 egg (for egg wash)
Instructions
Preheat oven to 425°F (220°C).
In a saucepan, combine cherries, sugar, cornstarch, almond extract, lemon juice, and salt. Cook over medium heat until thickened, about 10 minutes. Stir frequently.
Roll out one pie crust and place it in a 9-inch pie pan. Pour the cherry filling into the crust.
Dot the filling with butter. Roll out the second pie crust and cover the pie, crimping the edges to seal. Cut slits in the top for steam to escape.
Brush the top crust with beaten egg for a glossy finish.
Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
Let cool before serving.
Notes
For a sweeter pie, add an additional 1/4 cup of sugar.
If using frozen cherries, thaw and drain them before using.
