Ingredients

Scale
  • Main Ingredients:
    • 1/2 cup rice vinegar (or white vinegar)
    • 1/2 cup water
    • 1/2 cup granulated sugar
    • 2 tablespoons honey (optional)
    • 2-3 cloves garlic, minced
    • 1-2 teaspoons red pepper flakes (adjust to taste)
    • 1 tablespoon soy sauce (or fish sauce)
    • 1 tablespoon ketchup
  • Thickening Agent:
    • 1 tablespoon cornstarch
    • 2 tablespoons water
  • Optional Add-ins:
    • 1-2 fresh red chilies, finely chopped
    • 1 tablespoon ginger, minced
    • Lime juice (to taste)

Instructions

  • In a small saucepan, combine rice vinegar, water, granulated sugar, honey (if using), minced garlic, red pepper flakes, soy sauce, and ketchup. Bring to a simmer over medium heat, stirring until the sugar dissolves.
  • Reduce the heat to low and let the sauce simmer for 5-7 minutes, allowing the flavors to meld.
  • In a small bowl, mix the cornstarch with water to create a slurry. Slowly pour the slurry into the simmering sauce, stirring constantly until the sauce thickens.
  • If using, add finely chopped fresh red chilies, minced ginger, or a squeeze of lime juice to the sauce. Stir well to incorporate.
  • Remove from heat and let cool. The sauce will continue to thicken as it cools.
  • Store in a clean jar or bottle in the refrigerator for up to 2 weeks.

Notes

  • Adjust the sweetness by adding more or less sugar or honey.
  • Increase the spiciness by adding more red pepper flakes or fresh chilies.
  • For a more authentic taste, replace soy sauce with fish sauce.
