Huli Huli Chicken is a flavorful Hawaiian dish made with tender chicken marinated in a sweet and savory blend of pineapple juice, soy sauce, and fresh ginger. Ingredients

  • Main Ingredients:
    • Chicken: 4 bone-in, skin-on chicken thighs or drumsticks
    • Pineapple Juice: 1/2 cup
    • Soy Sauce: 1/4 cup
    • Brown Sugar: 1/4 cup
    • Ketchup: 1/4 cup
    • Rice Vinegar: 2 tablespoons
    • Ginger: 1 tablespoon fresh ginger, grated
    • Garlic: 3 cloves, minced
    • Sesame Oil: 1 tablespoon
    • Worcestershire Sauce: 1 tablespoon
    • Sriracha: 1 teaspoon (optional, for a spicy kick)
    • Green Onions: 2, chopped (for garnish)
    • Sesame Seeds: 1 tablespoon (for garnish)
  • Optional Ingredients:
    • Pineapple Rings: 4-6 rings, grilled
    • Bell Peppers: 2, cut into strips and grilled
    • Cilantro: 1/4 cup chopped fresh cilantro (for garnish)
    • Lime: 1 lime, cut into wedges (for serving)

Instructions

  • In a bowl, mix pineapple juice, soy sauce, brown sugar, ketchup, rice vinegar, grated ginger, minced garlic, sesame oil, Worcestershire sauce, and sriracha.
  • Place chicken in a large resealable bag and pour marinade over it. Seal the bag and marinate in the refrigerator for at least 2 hours, preferably overnight.
  • Preheat grill to medium-high heat. Remove chicken from marinade and grill for 6-8 minutes per side, or until fully cooked.
  • Optional: Grill pineapple rings and bell peppers alongside chicken.
  • Garnish with chopped green onions, sesame seeds, and fresh cilantro. Serve with lime wedges.
