Ingredients

  • Beef chuck roast (cut into chunks)
  • Potatoes (Yukon Gold or Russet)
  • Carrots
  • Onion
  • Garlic
  • Beef broth
  • Tomato paste
  • Worcestershire sauce
  • Thyme
  • Bay leaves
  • Salt
  • Black pepper
  • Olive oil
  • Cornstarch (optional for thickening)
  • Fresh parsley (optional)

Instructions

  • Set the Instant Pot to sauté mode. Add olive oil and brown beef chunks in batches. Remove and set aside.
  • Sauté onions and garlic in the same pot until softened.
  • Stir in tomato paste, Worcestershire sauce, salt, pepper, and thyme. Cook for 1-2 minutes.
  • Add beef back to the pot, along with beef broth, potatoes, carrots, and bay leaves.
  • Secure the lid and set the Instant Pot to manual high pressure for 35 minutes. Quick release the pressure once done.
  • (Optional) For a thicker stew, mix cornstarch with water and stir into the stew. Let it simmer for a few minutes using sauté mode.
  • Garnish with fresh parsley and serve hot.
