Make a delicious and tender corned beef meal quickly with this Instant Pot Corned Beef recipe. This easy recipe includes corned beef brisket, cabbage, potatoes, carrots, and aromatic spices. Perfect for a comforting family dinner, especially on St. Patrick's Day. Optional ingredients like turnips and parsnips add extra flavor and variety.

Ingredients

  • Corned Beef Brisket: 4-5 pounds with spice packet.
  • Water: 4 cups.
  • Cabbage: 1 medium head, cut into wedges.
  • Potatoes: 8-10 small red potatoes, halved.
  • Carrots: 4-6 large carrots, peeled and cut into chunks.
  • Onions: 2 large onions, peeled and quartered.
  • Garlic: 4 cloves, peeled and smashed.
  • Bay Leaves: 2-3 bay leaves.
  • Black Peppercorns: 1 tablespoon.
  • Mustard Seeds: 1 tablespoon.
  • Allspice Berries: 1 tablespoon.
  • Optional Ingredients: Turnips: 2-3 medium turnips, peeled and cut into chunks; Parsnips: 2-3 medium parsnips, peeled and cut into chunks; Celery: 2-3 stalks, cut into chunks; Fresh Parsley: Chopped, for garnish; Horseradish Sauce: For serving.

Instructions

  • Place the corned beef brisket in the Instant Pot and add the spice packet.
  • Pour in 4 cups of water, then add bay leaves, black peppercorns, mustard seeds, and allspice berries.
  • Close the lid and set the Instant Pot to cook on high pressure for 90 minutes.
  • Once the cooking time is up, let the pressure release naturally for 15 minutes, then quick release any remaining pressure.
  • Remove the corned beef and set aside. Add the potatoes, carrots, onions, garlic, and optional ingredients like turnips, parsnips, and celery to the Instant Pot.
  • Place the cabbage wedges on top of the vegetables.
  • Close the lid and cook on high pressure for 5 minutes.
  • Quick release the pressure. Slice the corned beef and serve with the cooked vegetables. Garnish with fresh parsley and serve with horseradish sauce.

Notes

  • For a spicier dish, add additional mustard seeds or black peppercorns.
  • Serve with a side of mustard or horseradish sauce for extra flavor.
