Make a delicious and tender pot roast in a fraction of the time with this Instant Pot Pot Roast recipe. This comforting dish features beef chuck roast, carrots, potatoes, onions, and flavorful seasonings, all cooked to perfection in the Instant Pot. Quick, easy, and hearty, it's the perfect meal for a cozy dinner.

  • 3 lb beef chuck roast
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 4 large carrots, cut into chunks
  • 4 potatoes, quartered
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Set the Instant Pot to "Sauté" and heat the olive oil. Season the beef chuck roast generously with salt and pepper.
  2. Sear the roast on all sides until browned, about 3-4 minutes per side. Remove and set aside.
  3. Add chopped onions and garlic to the pot, sauté for 2-3 minutes until softened.
  4. Stir in tomato paste, beef broth, Worcestershire sauce, thyme, and rosemary, scraping up any browned bits from the bottom of the pot.
  5. Return the roast to the pot and secure the lid. Set the Instant Pot to "Pressure Cook" on high for 60 minutes.
  6. Once done, allow the pressure to release naturally for 10 minutes, then quick release the remaining pressure.
  7. Add the carrots and potatoes to the pot. Secure the lid and cook on high pressure for an additional 10 minutes.
  8. Once finished, allow for a quick pressure release.
  9. Remove the roast and vegetables from the pot. Slice the roast and serve with the vegetables. Garnish with fresh parsley if desired.

Notes

  • For extra flavor, add a splash of red wine to the broth before pressure cooking.
  • If you'd like a thicker gravy, set the Instant Pot to "Sauté" after cooking and whisk in a cornstarch slurry (1 tbsp cornstarch mixed with 1 tbsp water).
