  • 6 slices bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 3 cups potatoes, diced
  • 2 cups cabbage, shredded
  • 1 carrot, sliced

  • ½ teaspoon black pepper
  • ½ teaspoon thyme
  • 1 cup milk or heavy cream (optional)
  • 2 tablespoons butter

Instructions

  • In a large pot, cook the bacon over medium heat until crispy. Remove and set aside.
  • In the same pot, sauté onion and garlic in bacon fat until softened.
