6 slices bacon, chopped
1 onion, diced
2 cloves garlic, minced
4 cups chicken or vegetable broth
3 cups potatoes, diced
2 cups cabbage, shredded
1 carrot, sliced
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon thyme
1 cup milk or heavy cream (optional)
2 tablespoons butter
Instructions
In a large pot, cook the bacon over medium heat until crispy. Remove and set aside.
In the same pot, sauté onion and garlic in bacon fat until softened.
Add broth, potatoes, cabbage, and carrot. Season with salt, pepper, and thyme.
Bring to a boil, then reduce heat and simmer for 20–25 minutes, until vegetables are tender.
Stir in milk or cream (if using) and butter. Simmer for another 5 minutes.
