For the Beef:

  • 3-4 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup water
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste

For the Sandwich:

 

  • 6-8 Italian rolls or French bread rolls
  • 2 cups giardiniera (spicy or mild, depending on preference)
  • 2 cups roasted sweet peppers (optional)
  • Provolone cheese slices (optional)

Instructions

  • Preheat oven to 325°F (163°C).
  • Heat olive oil in a large Dutch oven over medium-high heat. Brown the beef chuck roast on all sides. Remove the beef and set aside.
  • In the same pot, add chopped onion and garlic, sauté until softened.
  • Add beef broth, water, Worcestershire sauce, soy sauce, oregano, basil, thyme, rosemary, red pepper flakes, salt, and pepper. Stir to combine.
  • Return the beef to the pot. Bring to a simmer, then cover and transfer to preheated oven. Cook for 3-4 hours, or until the beef is tender and easily shredded.
  • Remove the beef from the pot and shred it using two forks. Return the shredded beef to the pot to absorb the juices.
  • Toast the Italian rolls or French bread rolls.
  • Assemble the sandwiches by placing shredded beef on the rolls. Top with giardiniera and roasted sweet peppers. Add provolone cheese if desired.
  • Serve the sandwiches warm.

Notes

  • Giardiniera can be adjusted to mild or spicy based on preference.
  • Roasted sweet peppers are optional but add extra flavor.
  • Leftover beef can be stored in the refrigerator for up to 3 days.
