4 boneless, skinless chicken breasts
1 lb baby potatoes, halved
1 cup chicken broth
2 tbsp olive oil
1 tbsp Italian seasoning
4 garlic cloves, minced
1 tsp paprika
1 tsp salt
½ tsp black pepper
½ cup grated Parmesan cheese
Optional: fresh parsley for garnish
Instructions
Add chicken breasts and halved baby potatoes to the crockpot.
In a bowl, mix chicken broth, olive oil, Italian seasoning, minced garlic, paprika, salt, and black pepper. Pour over the chicken and potatoes.
Cover and cook on low for 6-7 hours or high for 3-4 hours, until chicken is tender and potatoes are cooked.
Sprinkle Parmesan cheese over the dish during the last 15 minutes of cooking.
