Ingredients

  • Potatoes: 2 pounds (Yukon Gold or red potatoes work best)
  • Red Onion: 1 small, thinly sliced
  • Cherry Tomatoes: 1 cup, halved
  • Bell Peppers: 1 red and 1 yellow, diced
  • Black Olives: 1/2 cup, pitted and sliced
  • Capers: 2 tablespoons, drained
  • Fresh Basil: 1/4 cup, chopped
  • Fresh Parsley: 1/4 cup, chopped
  • Fresh Oregano: 1 tablespoon, chopped
  • Garlic: 2 cloves, minced
  • Extra Virgin Olive Oil: 1/4 cup
  • Red Wine Vinegar: 3 tablespoons
  • Dijon Mustard: 1 teaspoon
  • Salt: 1 teaspoon
  • Black Pepper: 1/2 teaspoon
  • Parmesan Cheese: 1/4 cup, shaved (optional)

Instructions

  • Boil potatoes in salted water until tender, about 15-20 minutes. Drain and let cool slightly.
  • Cut potatoes into bite-sized pieces and place in a large bowl.
  • Add sliced red onion, halved cherry tomatoes, diced bell peppers, black olives, and capers to the bowl.
  • In a small bowl, whisk together extra virgin olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper.
  • Pour the dressing over the potato mixture and toss to combine.
  • Add chopped basil, parsley, and oregano, and gently mix.
  • Sprinkle with shaved Parmesan cheese (if using) before serving.
