Ingredients

  • 1/2 lb shrimp, peeled and deveined

  • 1/2 lb calamari, cleaned and sliced

  • 1/2 lb mussels, scrubbed and debearded

  • 1/2 lb scallops

  • 1/4 cup celery, finely chopped

  • 1/4 cup red onion, finely chopped

  • 1/4 cup fresh parsley, chopped

  • 1/4 cup extra virgin olive oil

  • 2 tbsp fresh lemon juice

  • 1 tbsp red wine vinegar

  • Salt and pepper to taste

  • Optional: garlic, capers, or chili flakes for extra flavor

Instructions

  1. Boil shrimp, scallops, and calamari for 2โ€“3 minutes until just cooked. Drain and cool.

  2. Steam mussels until they open. Remove from shells and discard any that donโ€™t open.

  3. In a large bowl, combine all cooked seafood with celery, onion, and parsley.

  4. In a small bowl, whisk olive oil, lemon juice, vinegar, salt, and pepper.

  5. Pour dressing over seafood mixture. Toss gently to combine.

  6. Chill in the fridge for at least 1 hour before serving.

Notes

  • Use the freshest seafood possible for best results.
