  • 4 boneless, skinless chicken breasts
  • 2 ripe peaches, sliced
  • 2 jalapeños, sliced (seeds removed for less heat)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp fresh lime juice
  • 2 tbsp honey
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • Salt and pepper to taste
  • ¼ cup fresh cilantro, chopped (for garnish)
  • Optional: 1 tbsp butter

Marinade Ingredients:

  • ¼ cup olive oil
  • 2 tbsp soy sauce
  • 1 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Marinate the Chicken: Combine olive oil, soy sauce, balsamic vinegar, honey, chili powder, cumin, garlic, salt, and pepper. Marinate the chicken for at least 30 minutes.
  2. Cook the Chicken: Heat olive oil in a pan over medium heat. Add the marinated chicken and cook until browned and fully cooked, about 6-7 minutes per side.
  3. Prepare the Sauce: In the same pan, sauté garlic, jalapeños, and peaches for 2-3 minutes. Add lime juice, honey, smoked paprika, and cumin. Stir to combine and simmer for another 3-4 minutes.
  4. Serve: Pour the peach-jalapeño mixture over the chicken. Garnish with cilantro and butter if desired. Serve hot.
