1 cup fresh lime juice (about 6-8 limes)
1/2 cup fresh ginger, sliced
1/4 cup fresh mint leaves
1/2 cup sugar
6 cups water
Ice cubes
Lime slices and mint sprigs for garnish
Instructions
In a large pot, bring 2 cups of water to a boil. Add the sliced ginger and simmer for 10 minutes.
Remove from heat and strain the ginger water into a pitcher.
Add the sugar and stir until dissolved.
Add the fresh lime juice and mint leaves to the pitcher. Stir well.
Add the remaining 4 cups of cold water and refrigerate for at least 1 hour.
Serve over ice, garnished with lime slices and mint sprigs.
Notes
Adjust the sweetness by adding more or less sugar to taste.
For a spicier version, increase the amount of ginger.
You can also muddle the mint leaves gently to release more flavor.
