Jimmy Carter’s Grandmother’s Peanut Butter Cookies are a nostalgic Southern treat made with simple pantry staples. Packed with creamy peanut butter flavor and a soft, chewy texture, these old-fashioned cookies bring comfort and tradition to your kitchen.
1 cup peanut butter
1 cup granulated sugar
1 egg
1 tsp vanilla extract (optional)
Preheat oven to 350°F (175°C).
In a mixing bowl, combine peanut butter, sugar, egg, and vanilla (if using).
Stir until well blended.
Roll dough into 1-inch balls and place on an ungreased baking sheet.
Flatten each cookie with a fork, making a crisscross pattern.
Bake for 10–12 minutes or until edges are lightly browned.
Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
No flour required, making it naturally gluten-free.
Use crunchy peanut butter for added texture.
Cookies will be soft when removed from oven and firm up as they cool.
