Ingredients

Scale
  • 1 cup peanut butter

  • 1 cup granulated sugar

  • 1 egg

  • 1 tsp vanilla extract (optional)

Instructions

  1. Preheat oven to 350°F (175°C).

  2. In a mixing bowl, combine peanut butter, sugar, egg, and vanilla (if using).

  3. Stir until well blended.

  4. Roll dough into 1-inch balls and place on an ungreased baking sheet.

  5. Flatten each cookie with a fork, making a crisscross pattern.

  6. Bake for 10–12 minutes or until edges are lightly browned.

  7. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • No flour required, making it naturally gluten-free.

  • Use crunchy peanut butter for added texture.

  • Cookies will be soft when removed from oven and firm up as they cool.
